On the first day of our French cooking class in New York with the world-celebrated chef, I provoked some snickers among my co-apprentices (and a level stare from the maestro himself) when I declared with much confidence and schwarmerei that I saw myself as a great bon vivant gastronome because I knew all the fast food chains in my hometown upstate, a comment which, I realized weeks later, had made me appear desperately raffish and 'small-townish' if not downright oblique and demented.
